3 tablespoons butter
1/3 cup brown sugar
1 package (9 oz.) corn bread mix
6 pineapple rings
6 slices Canadian bacon
Place butter and brown sugar in 9 inch round cake pan and microwave for 1/2 to 1 minute on High power (100%). Stir and cook additional minute so syrup will caramelize. Prepare cornbread according to package directions and set aside. In bottom of cake pan, on syrup, place one pineapple ring in center and remaining rings around it. Place a piece of bacon on top of each pineapple ring. Top with batter. Cook cake for 7-12 minutes on Medium-high power (70%). Let cool several minutes. Turn onto serving plate. Cut into wedges and serve with hot maple syrup.
