Easy Gravy

If this recipe is doubled or tripled, whisk several times while cooking. Recipe doubled will cook about 6 minutes, tripled about 7-8 minutes (See Dealing in Multiples in Definitive Microwave Cookery II for full explanation.) If a thicker gravy is desired, add another tablespoon of flour. Use meat or poultry drippings instead of margarine if desired. Also, for less fat content, use Butter Buds or all chicken broth.

2 tablespoons melted margarine
2 tablespoons flour
1 cup chicken broth
1/2 teaspoon soy sauce
1/4 teaspoon celery salt
1 pinch black pepper

Melt margarine for 20-30 seconds on High power (100%) in 2 cup microwave measure. Thoroughly blend in flour. Add broth and seasonings, whisking thoroughly. Cook on High power (100%) for 2-3 minutes, stirring once. Makes 1 cup.
