Goodbye Wintertime Blues... Hello Springtime & Summer


Remove 1 cup cake mix and reserve. Sprinkle remaining dry cake mix (3 cups) in a greased 8 x 12 inch baking dish. Spread filling over cake mix. Sprinkle reserved mix over filling. Combine water and lemon. Pour evenly over cake. Sprinkle with cinnamon and microwave at 100% power (high) for 10-14 minutes. Serve warm or cold. Great with ice cream. TIP: This may also be made in a round or oval casserole dish if desired.

Stir together flour and baking powder; set aside. Beat butter with electric mixer for 30 seconds. Add ¼ cup sugar and beat until combined. Add dry ingredients alternating with milk, beating after each addition. Spread evening in 1 ½ quart casserole. Stir together berries, juice and remaining 3 Tbsp. sugar and cinnamon. Pour over dough. Cook, uncovered, at 100% power (high) for 5 -8 minutes or until berry mixture is bubbly and cake springs back when lightly touch. Serve with ice cream if desired.
Serves 6-8.

1 box yellow cake mix
1 can fruit pie filling
½ cup water
1 tsp. lemon juice
½ tsp. cinnamon

¾ cup flour
½ tsp. baking powder
3 Tbsp. butter, softened
¼ cup sugar
1/3 cup milk
1 cup fresh berries or cut-up fruit
1/3 cup orange juice or water
3 Tbsp. sugar
¼ tsp. cinnamon
