Farm Country Eggs

4 slices bacon, cooked
2 tablespoon butter
6 oz. frozen hash brown potatoes
1/4 cup chopped onion
1/4 cup chopped green pepper
6 eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon dried basil, optional
Dash pepper
1 cup (4 oz.) cheddar cheese, shredded


Cook bacon covered with paper towel for a minute at a time on High power (100%) until done. Cool, crumble and set aside. Place butter, potatoes and vegetables in 8 inch round dish. Cook, uncovered, for 4-5 minutes at High power (100%) , stirring once. While potato mixture is cooking, mix eggs, milk and seasonings. Flatten potato mixture and pour eggs over the top. Cover and microwave on Medium-high power (70%) for 5 –7 minutes or until eggs are almost set. Stirring once. Sprinkle with bacon and cheese. Heat, uncovered, for additional 1 minute until cheese starts to melt. Remove and let stand several minutes before serving.
