Berry Cobbler

Canned and drained berries or other type fruits such as peaches may be substituted for fresh.  They will not have to be cooked to form juice.  If fresh fruit is used, use any fruit juice such as orange juice.  While baking, the fruit mixture goes to the bottom of dish and a cake-like layer forms on the top.


1/4 cup softened margarine
1/2 cup sugar
1 cup flour
2 teaspoons baking powder
1 dash salt
1/3 cup milk
1 1/2 cups fresh berries or other type fruit
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/2 cup berry juice


Mix together margarine and sugar.  Mix in flour, baking powder and salt alternately with milk.  Pour into 2 quart oblong or round microwave casserole.  Put berries and ½ cup sugar in microwave measure.  Cook for 2-3 minutes at 100% power so berries start to make juice.  Mix juice into berry mixture and spoon over dough.  Bake at 70% power for 10-15 minutes.  Serve with cream, whipped cream or ice cream.
